Mastering the Art of Race Driving" by Carl Lopex. This is the manual for the Skip Barber driving school. Bob Bondurant has also written a good book - "Bob Bondurant on High Performance Driving". Specifically to Porsche, consider Vic Elford's "Porsche High-Performance Driving Handbook". Also consider Carroll Smith - noted race engineer guru. "Race to Win" is on driving technique, while "Engineer to win" and "Tune to win" are more technical.
