As with all the special / limited edition cars - think Barchetta / Scuderia / Stradale - part of the increased value is in the limited numbers.

All were sold as special cars with sales limited to the "best customers" in an effort to get them to the people that will add them to their, already extensive, collections and keep them.  As a result, few tend to reach the open market.

They are more trophy pieces with a value above their brethren based upon, in large part, on their limited production numbers (usually about 500 total).

I love the car, but I'm not sure I'd pay another $150k for the targa top and few extra ponies. I guarantee you there are plenty of aftermarket companies that would turn a 575M into a targa for under $20k.
