I don't know what happens with regards to valve seat recession with USA gas, but if you have the standard seats I suspect your exhausts will close up slightly and the inlets will open up, but very slightly!  This would be over the 15,000 mile adjustment interval.  I assume this is the first time you've done the job, otherwise it would be interesting to compare the results from the last time.
 
So if it were my car, I'd run the exhausts at 0.35mm and the inlets at 0.20.  But if you have no data as yet, I'd just make them all the same what ever you decide.  Don't re-use old shims if the hardness has begun to wear off and as you've done, use the micrometer on every shim to calculate the clearance.
