If it's good enough for Hemmingway to call motor racing one of the "true" sports, it's good enough for me -- though I disagree with him on bullfighting, it's little more than barbaric in most cases, but at least the bull can win a few of the fights, though it has little choice in the matter ... and mountaineering, in its pure forms, is certainly one of the elite sports. As for F1 drivers, well, 50 years ago in more gentlemanly times, with elbows and chins visible, it was certainly a true sport, today it is most certainly a business first and foremost, but hell, those drivers are supreme athletes and brave souls, so it's still a true and unequalled sport, no question.
