That color coat/clear coat system sounds the same that I used on my life sized Porsche and Mercedes using the same technique!

I may as well use it on my Die cast cars!    I have an Air Brush gun but will have to practice with it....

As far as repainting, once you've completely disassembled the model, you can strip the old paint off with various chemicals - some actual paint stripping stuff, some as common as Easy-Off oven cleaner (though that requires a bit more effort).  You can then touch up blemishes in the metal, spray with primer and then the color of your choice.  Airbrush is obviously the best painting tool, but some have good success with rattle cans by warming them in hot water.  The key there is many light coats with one final "wet" coat.  That last one is the trickiest - wet enough to get a smooth, shiny finish, but not so wet that it runs.

An alternative (if you're using something like Testors model paint) is the color coats, and then their gloss clear lacquer.  The lacquer is more forgiving and can be rubbed and polished if it doesn't come out perfectly.

BTW - what I've done is to get the gloss clear lacquer in a spray can (pre-thinned that way), and transfer it to my airbrush bottle via a small funnel that I make with rolled up tin foil (this contains the overspray and prevents splatter).
