For the interior carpet pieces, I went with carpet set from this guy in Belgium...  I'll have to see if I can dig his name up.
For the non-carpet pieces (like your black board), I got heavy weave fabric (like the race car seats) and just recovered everything.   Mine too had lighted significantly with age then someone sprayed them with paint or dye then they faded again.

Long black board - - - the thing that’s split into two parts and the middle seam is covered by a strip about an inch wide?  Horizontal shelf thing?  Should also have two little snaps on it.  Is that the piece?

But I still don't know how to get out the long black board that goes over the edge of the carpet behind the seats. I want to make it VERY black again.

Get some 3M Hi-Strength 90 Spray Adhesive. Spray it on both pieces (wall and carpet), let it tack up for 10 minutes then press into place. I've used this on the interior of my airplane and it is holding up well on the soundproofing and carpeting. The regular 3M Super 77 Spray Adhesive is not as strong.

I did this job on my 328 and 400i years ago. You normally use commercial or industrial spray glue (contact glue) from an aerosol can. Very common to get over here from auto supply stores. It's made for car trimming. For most car trimming supplies you can check out Woolies here I the UK who are the standard for interior car trim. I know that may not help you guys in the USA causing shipping costs can be high but at least the exchange rate is good for you right now!

Does it look like the carpet would have had a thin layer of foam behind it? This is happening to the trunk carpets on my GT4, especially the two panels underneath the trunk lid.
 
No matter what I've tried, it still peels off and the culprit is that degrading layer of foam (or whatever else it is), nothing seems to want to stick to it. I've tried to scrape as much of it off as possible (near the edges where it's peeling off), but it looks like I need to completely remove the carpets and re-glue.
 
I'd like to hear suggestions as to what glue to use.

My 'wall carpet' behind the seats is falling off. I guess the glue has dried out. And I noticed the material between the carpet and the fire wall is also loose. It looks like I need to take the 2 seatbelts screws off to take the carpet off. Has anybody done this before ? How about the black board behind the seats, how do I take that off. I want to paint it or do something to get it black again. The sun has done some damage to it. It's pretty greyish now.
