The answer is just like with Webers. Set them once according to the manual then 
bury your screwdrivers in the back yard.

It's really not that hard. All you need is some time and some mechanical
sympathy. I did my float levels, balancing, rejetting and tuning and I
learnt it all just by reading up on the internet.

I also got very good results.

It goes without saying - the number of 'professionals' who can fine-tune
carbs for a high-performance car are getting fewer and fewer.

If your mechanic doesn't like "touching" the carbs, do the
obvious:
Touch them yourself!  Go ahead, you won't go blind.
