When we were driving the Rolls back across the country (for those who don't know the story, go see http://rollsacrossamerica.blogspot.com), we were in Baker, Nevada at Great Basin National Park and chatting with someone who had just come from Zion NP. Much of my accommodations was made concierge style where I'd call my wife or father and say "I'm in this town and want to drive another 200-300 miles today, find me a place, make a reservation, and then email me the address of where I'm going." But on this day, I didn't do that, but instead relied on a recommendation of that lady I met in Baker who said she'd just stayed at the Bumbleberry Inn just outside Zion. Unless you stay at the lodge in Zion ($$$ and probably full), in the summer you cannot drive through most of Zion. But they provide free shuttles, and the shuttles also pick you up outside of the park including AT the Bumbleberry Inn. We got to the Bumbleberry Inn late at night (after stopping on the side of the road and marveling at the darkest skies I've ever seen before), and it wasn't until I woke up and looked out the glass doors at the back of the room that I realized we were lookign straight up at a sheer face of red rock right across the road.
 
That might or might not be the best place to stay near Zion, but it worked really well for us. They have a big gift shop and family-style restaurant and of course sell Bumbleberry Pie. :-)
 
In Arches (a little farther than what I think you want to do) we got stuck due to losing a BSF fastener in the new overdrive I put on the Rolls, so I had to burn an extra day there. We went on a "Sunset Hummer Tour" in Moab just outside of Arches NP and it was way awesome. That was through the Moab Adventure Center, and there are tour companies like that near al the "red rock parks."
 
On my last business trip to Yuma, we flew into/out of Vegas (cheapest airport). On the way home, I stayed the night in Vegas and got out of town as quickly as I could early the next morning to go see stuff to the west to include Death Valley, Inyo National Forest (Bristlecone Pines), Manzanar National Historic Site (Japanese camp during WWII), etc. If that interests you, I can tell you more but I think you'll have more fun to the east in those Utah parks.

I concur with your ideas on Zion and Bryce. Try to spend a little time there and pick at least one hike per place. If you're really up to it, hike one of the canyon/river things from the middle of Zion out (there are companies that guide these and will drive you back). At Bryce hike down into the canyon. I've never done either of these (just done some look downs from the scenic points when we took the Rolls cross country in 2011 and didn't have enough time), but they are on my bucket list.
 
The drive on route 12 (I think that is it) along the route from Zion to Bryce to Capitol Reef to Arches is absolutely spectacular and unforgettable.
