I think you may have misinterpreted part of the manual. The airbags in your vehicle (and all vehicles) are not keyed to the use of a seatbelt. In the case of your Canyon, the passenger front seatbelt latch is ONE of several sensors used to determine if the passenger seat is occupied (and if the passenger airbag is therefore enabled), but it is not the ONLY sensor used for that determination, and the airbag can fire without the passenger front belt being in use. All other airbags have no such seatbelt interlock.

They do make it very clear (and it should be clear to anyone) that the airbags should always be considered no more than supplemental restraints used to augment, not replace, a standard seat belt.

My GMC Canyon (2007) owners manual states the airbags will not deploy unless wearing a seatbelt.  I believe this is pretty much how it is.

Pre-airbag era accidents weren’t all that pretty. People flail around in a car really good during the heaviest impacts. True, they do survive (with injuries) when they’re buckled up. When there were no seatbelts, you’d just shoot out the windshield (my Dad once saw the results of that when he passed by an accident scene in the ‘60s... He never forgot and could never unsee body parts all over the road).

 

As a matter of fact, there was one time when I was a really little kid (probably 4 or 5 years old), I was sitting on my Mom’s lap, in the middle of the back seat as the car was loaded with family members, going to some function or another. My Dad had to jam on the brakes to avoid something and in an instant, there I was in the front row, forehead firmly planted on the top edge of the dashboard...

 

Never been the same since.

 

And ever since, I’ve always buckled up.

If you wear a seat belt 

Who cares?

The belt would have to fail before you hit the steering wheel
