FYI - I did a floor epoxy coating in a fish tank saltwater equipment room, and it only lasted about a year before it started flaking up
I would probably go with tiles, then you can replace them as necessary. however if you're planning to work on the cars, as I know you do, perhaps just a good old cement floor is the best for finding draft nuts and rolling around on a mechanic's seat

Matt,
If you do a floor coating, I would highly recommend
buying ribbed rubber mats for under your cars, or at least your
daily driver.
The mats will collect/hold all of the water,
leafs, dirt, etc.. that falls off when parked. It will save you from
puddles of dirty standing water
on your new finished floor.
You can drag the mats outside to clean and hose
them off a couple of times a year.
