Matt, I can offer no knowledge on Scottsdale but...

The National Park Service lodge at the Grand Canyon has a decent restaurant 
carrying local meats and fare. Their bar also has a good selection of whiskey.

You have to hike Angel’s Landing at Zion if you aren’t already planning on it.
