At the GC, we're staying in a cabin that is part of the Bright Angel Lodge. The hike from the south rim there into the canyon takes the Bright Angel trail. We plan to hike/run down to Phantom Ranch for lunch, if possible, and then back up. My son just did this as a hike a few weeks ago and had no problems, and like you said, we're in shape (4 marathons this past year), so it shouldn't be a problem -- weather (ice) permitting....

The National Park Service lodge at the Grand Canyon has a decent restaurant carrying local meats and fare. Their bar also has a good selection of whiskey.
You have to hike Angel’s Landing at Zion if you aren’t already planning on it.
