I usually check mine shortly after engine shutdown when
buying gas.

Yes, the whole oil level thing is ambiguous on these early
V8 cars.  Best proceedure is to drain the oil, fill with 9 quarts,
and look at the dipstick.  Look at it hot, cold, after sitting a
few minutes, etc.  Since the engine is full, you will now
have an understanding of how the oil level varies with
differing conditions.
