I had an occasional sinking pedal on my 328GTS, usually right after a cold
start, when backing out of my garage.  Never happened again during a drive,
until the next cold start.  My ferrari mechanic said it was a bad "check
valve" in the vacuum assist...replaced it, and all was well.

No, not in this case.

A weak or leaking vacuum booster will cause a harder pedal, as well as other
symptoms caused by a vacuum leak (poor idle, rough running, etc) but will
not cause the pedal to slowly sink under light pressure. This is a classic
case of an internal seal in the master leaking internally.

I just re-read Rui's note and the thing that hit me
immediately, that I hadn't seen before, is the brake
booster.  If there is a leak in the booster, the
valving or a vacuum line, the driver will experience
these kinds of pedal fluctuations.  Worth considering
before tearing a master cylinder out...
