2 reasons:
1. The bad start you mention eats time, but doesn't affect
terminal speed.
2. Weight, aero resistance, and power curve characteristics
of your vehicle. For example, a light vehicle with a moderate
amount of power (a Lotus 7, for example), will
jump off the start and quickly get to a fairly decent
velocity. But it then hits an aerodynamic brick wall and
doesn't gain much additional speed. So it can post a quick
time with low terminal velocity. Heavier cars with a LOT of
power take a bit of time reaching 60 or so, because of
momentum and wheel spin. But they have enough power
to not hit that aero brick wall. They just keep accelerating.

No you miss the whole point of the 458...
Anyone can turn those times, its a video game once you have all electronics
and launch control, no skill other than being able to keep the steering
wheel straight is needed (I bet you could use your right foot only to
achieve this 1/4 mile run...)
I ran my Vette out at a local strip last Fall. Its a 6M, big 305 size rear
tires, 430+hp and lb-ft. Its a bit of a beast and not great for drag strip
work (and I honestly suck at launches)... I spent all not starting in the
13.0's and getting into the upper-mid 12 second range but it required a lot
of concentration and work.
There was a guy who showed in a CLS63 AMG. He ran 12.7 on his first run
12.7 on the second
12.7 on his eighth run...
Guy in a Lexus IS-F ran 12.8's all night long except for 1 run where he ran
a 13.4 (because he wanted to try it without launch control)
To my mind, a waste of time, and honestly the strip is a bit of fun (this
place has $20 run what you brung night)... There was a guy with a Vette
funny car that ran a 8.2 at 172 mph. But of course he did that 1 time and
had to go rebuild the thing for his next run...
No question the paddle shifters are faster, but better? No way.
