Order the salt crusted sea bass, and wear pants that are comfortable.
It is my favorite place to eat in all of Rome.  Last time we were
there, the minister of the interior came in with a couple of friends,
nothing like getting the place cleared by the Italian secret service
first.  If the power brokers are eating there, you know it is good.
Off the beaten path, you have to know where you are going to stumble
onto it.  Love it.  Tourists only eat there if they get hopelessly
lost and stumble in through the front door.

If you want to get away from the hustle and bustle of Rome, I usually
stay up in Tivoli when I am there on business.  Hotel Sirene is my
home away from home.  Nothing like going out on your own terrace in
the morning and overlooking a canyon with a 100 ft waterfall in it.
If you make it to Tivoli, eat dinner at Antico Ristorante Sibilla.
Ask for a table in the garden outside and order the hot finger lamb
chops.  Pure magic.  If you are friendly to the owner, go into the
wine celler and pick out a nice Borolo...
