I only checked my springs when I took them out. I can send you the WSM if you like but this can only be done with them off the car. I will go out and measure for you but I have a US car but still might help. 
I am so paranoid of that kind of story. I unfortunately no longer gpo on secret trips without me knowing the roads etc, after a ver bad experience with a FCA trip which had us crossing a 10" ice cold river......
then driving 10 miles on a dirt road........That said these cars are very low in stock configuration. I see why 308 GTB/s guys lower them as they have a bit more wheel well space but the GT4 wheels are deep in the wells even in stock.

plus I have a nice new virgin valance!!!!!!!  two lowest points on a non euro spoiler GT4 are the low hump on the bottom of that valance and the middle of the car on a hump!!

I went on a 65 mile mini rally today (called a tour - sort of follow a route and amswer questions) a load of voinatge and not so vintage exotics. Great fun. All ending uop at a car show. However there were some very narrow lanes, highly cambered, often with gravel down the centre. One particular 2 mile stretch was gruesome and my car was scraping along for hundreds of yards at a time.  So I was crawling along at about 10 mph with a queue of about 6 higher clearance cars getting frustrated behind me. So need to check what my ride height is - what is spec and decide what to do.

1. Well done on the re-jetting back to factory spec.. I'm always fascinated by previous owners who consider themselves more clever than professional engineers! That said, everything in a car is a trade-off. My guess is that your PO wanted a tiny bit more high speed grunt at the expense of drivability (slow running).

2. I definitely would restore the ride height to factory spec.. Same argument. Ride should be a little softer too without sacrificing handling or road-holding.

Well done on your ongoing restoration! Its an incredibly rewarding hobby, isn't it?!
