Any of you do sous vide for steaks? Perfect every time, regardless of thickness. That makes it impeccable for the Prime beef at CostCo, which they always cut quite thick. Just takes a few extra minutes to put a pretty sear on it at the end, but for being perfect every time it can literally be within a tenth of a degree. My wife likes hers medium (versus my rare-medium-rare). I have two different immersion heaters so they’re both perfect every time and ready at the same time, which is a nice bonus versus conventional cooking. Also no need to “rest” a steak with sous vide, so you can eat at the warmer temperature if you like.

Most of the rust removal systems are 1um fiber lasers.  A 10.6um CO2 laser would actually do a great job at cooking.  Very efficient.  You apply thermal energy directly to the surface of the meat.  And you could monitor the surface temperature with a thermal camera (with a 10.6um blocking filter).  I bet you could determine the optimal surface temperature profile versus time and control the CO2 laser to nail it every time.
