Ok here is the way it works

The thermostat turns on only one fan when it gets hot enough usually around 190

Regardless if the car is hot or not if you turn on the a/c the second fan goes on because you need additional air flow across the condenser

Ok, so there looks like 2 different sides of this story.  Did Ferrari
change the logic of the fans during the many year production run?

In fact the radiator of a 308 is oversized for the engine. If you are overheating you have a bad radiator or another serious issue. Ferrari's are very well suited for hot wx.
